I want to help, but I don't understand your problem exactly..
You add fields for tickets like in this thread:

And then you can see the fields in each ticket, but the fields are empty?
Or do you have the problem that you can't edit these fields like in this thread:
(http://www.osticket.com/forums/showthread.php?t=1095) ?
Maybe you can describe the problem in detail...
