In release blog it is said that organizations have account manager and primary contact. I can also see account manager field in organization info. Where do I change/add these?
Staff panel -> Users -> OrganizationsClick on the Organization you want to edit.Click on the name of the Organization again.Click on the Settings tab.

It's possible when you edit the source code, but otherwise I don't think it's possible within UI.
