Big thanks to the developers of OSTicket, it is a great product. The biggest difficulty is the time it can take getting around issues that do come up. As such I want to acknowledge everyone who has posted their feedback on these and other forums. It wouldn't be possible to do a fraction of such things like this upgrade if it wasn't for you.
If it helps here's a few notes per what I had to do :
The biggest issue (and take that as many hours) was the likes of the DB Error #1146: V1.6ST to V1.7.0. See http://osticket.com/forums/showthread.php?t=14873(http://osticket.com/forums/showthread.php?t=14873)

Email Piping - works great. Here's what was done:
Forward support@yourdomain.com to ostickets@support.yourdomain.com
Forward sales@yourdomain.com to ostickets@support.yourdomain.com
Email forwarder: ostickets@support.yourdomain.com to /home/support/public_html/api/pipe.php
Make sure /api/pipe.php is executable chmod 755
Things that would be great to have:
1. Open tickets Department Column - I don't understand why that was taken away in v1.7?
2. HTML option for Incoming Email and pasting images in replies. Inserting screen shots into emails is becoming common place with clients. A screen shot says a thousand words when it comes to explaining both problems and solutions.
